ONLYVANILLA.COM Signature Buttered Pecan Crème Brulée Recipe
Ingredients 1 3/4 cups heavy cream 6 tbs butter 1/3 cup granulate sugar 1/4 cup light brown sugar 4 tsp vanilla bean sugar 1 premium ONLYVANILLA.COM vanilla bean, split lengthwise 4 egg yolks 1/2 cup chopped pecans
Preparation Instructions
Preheat oven to 300 degrees.
In small sauté pan melt 2 tablespoons of butter over medium heat. Add pecans and toast to golden brown. Remove from heat and set aside.
In medium sized non-stick sauce pan, add the scrapings and empty pod of the ONLYVANILLA.COM vanilla bean (of your choice), heavy cream, 4 tablespoons butter and granulated sugar. While whisking, bring to a boil. Watch closely to avoid boiling over of the pan. Remove from heat.
In medium mixing bowl, whisk the egg yolks and light brown sugar until smooth. Slowly whisk in 1/2 cup of the hot cream mixture into egg yolks to temper. Slowly whisk the remaining cream mixture into the egg yolk mixture. Stir in the toasted pecans.
Fill ramekins or custard cups 3/4 full of the mixture. Place filled cups in roasting pan large enough to cover the cups half way up with water. Place roasting pan in lower part of preheated oven for 45-55 minutes, or until soft set. Remove from pan and let cool. Cover and refrigerate for at least 6 hours.
About an hour before serving, turn oven broiler on high and remove the cups from the refrigerator. Evenly sprinkle about a teaspoon of sugar on top of each cup. Place cups on baking sheet and place upper rack under broiler. Watch very closely until sugar is caramelized. Remove from broiler and let sugar harden for about 10 minutes.
(Note: You can also caramelize the sugar manually if you have a culinary torch.)

ONLYVANILLA.COM Old Fashioned Homemade Vanilla Bean Ice Cream
Ingredients
3 1/2 cups granulated sugar 3 large eggs 2 whole ONLYVANILLA.COM vanilla beans 1 quart heavy cream 1/2 gallon whole milk
Preparation This recipe is for 1 gallon freezers. Add sugar to large mixing bowl. Split the ONLYVANILLA.COM vanilla beans lengthwise and scrape the vanilla bean seeds and pulp from each piece and mix well with the sugar. (You can add the empty bean pods to a cup of sugar in a ziploc bag and let it set for a 2-3 weeks and have some wonderful vanilla sugar) Add the eggs to the sugar and beat with mixer until mixture is light and creamy. Add the cream and mix well. Pour this mixture into you homemade freezer can and add milk to the full line on the can. Insert the paddle into the freezer can and mix well. Freeze according to your homemade freezer manufacturers instructions. Once frozen remove the paddle from the can and cover the top of the can with plastic wrap, replace lid and set in deep freeze until ready to serve.
If you prefer a lighter ice cream, you can substitute whole or lowfat milk for the cream and you will end up with an ice milk with a beautiful old fashioned grainy texture. Copyright 2004 - ONLYVANILLA.COM

ONLYVANILLA.COM Vanilla Bean Glazed Fruit with Rum Raisins Recipe
Ingredients
3-4 fresh ripe pears 3-4 Granny Smith apples 1 cup golden raisins 1/2 cup Rum 1 whole ONLYVANILLA.COM vanilla beans 3/4 cup water 2 tbs white corn syrup 1 cup sugar
Preparation
Add the raisins and rum to a small sauce pan, cover and simmer over low heat. (Remove from stove top before removing lid as the alcohol in the rum can ignite near open flame.) Peel, core and wedge the pears and apples. In large sauce pan add the water, corn syrup and sugar. Split the ONLYVANILLA.COM vanilla bean lengthwise and scrape out the insides of each half. Add scrapings and both halves of the empty vanilla bean pod to the sauce pan. Cook over medium heat until it comes to a boil, then simmer until vanilla bean pulp is throughly mixed. Add the apples and pears and cook, stirring regularly. When the pears and apples are crispy tender remove them from the sauce pan. Continue to simmer the liquid until it is reduced to a thick glaze. Drain the rum from the raisins and place the fruit and raisins in serving bowl. Remove vanilla bean pod from the glaze and pour glaze over the fruit and mix well.
This recipe is delicious served warm or cold but is fantastic served warm over our homemade vanilla ice.

Homemade Pure Vanilla Extract Recipe
Ingredients
3 - 5 whole ONLYVANILLA.COM vanilla beans 1/2 cup of 35 to 40 proof clear vodka
Preparation
Split the ONLYVANILLA.COM vanilla beans lengthwise from one end to the other then cut them crosswise in 1/4 inch pieces. Place the cut beans in a small bottle with good tight lid. Add the vodka to the bottle and shake vigorously. Put the bottle in a cool dark place (not in refrigerator) for 2 to 4 weeks before using. The longer it sets the better the extract gets. Shake the bottle every day or two during the waiting period. This will make some of the best vanilla extract you have ever tasted. As you use the extract, simply add another chopped bean and add move vodka to the bottle for an almost endless supply of vanilla extract. Although this extract will have the beautiful flecks of vanilla seeds, be careful to not include the pieces of bean pods in your recipes. Hint: Try mixing different beans for a unique blend of vanilla extract.

Vanilla Lovers Vanilla Bean Pudding Recipe
Ingredients
1 1/2 cups whole milk 2 cups heavy cream 5 egg yokes 3 tablespoons corn starch 1 cup sugar 1 whole ONLYVANILLA.COM vanilla bean 1 tsp ONLYVANILLA.COM pure vanilla extract
Preparation
With a small knife, split the ONLYVANILLA.COM vanilla bean lengthwise and scrape the seeds from each half. In a small shallow bowl add the vanilla bean seeds to the sugar and work the seeds into the sugar. Add the corn starch to the sugar and vanilla seeds and mix throughly. Add the sugar mixture to a saucepan and whisk in the milk and heavy cream. Cook over medium heat, whisking constantly until the mixture is well thickened and remove from heat. In a medium mixing bowl, whisk the egg yolks and ONLYVNAILLA.COM pure vanilla extract until creamy. Very slowly whisk the liquid mixture into the egg yolks and return the pudding back to the sauce pan. Cook over medium heat until the pudding begins to simmer, remove from heat and pour into custard cups or parfait glasses. This pudding is wonderful served worm or cold. This pudding can also be used for vanilla cream pies.

Vanilla Bean Cheesecake Recipe Ingredients
Crust 1/2 cup finely chopped almonds 1 1/2 cups crushed vanilla wafers 5 tbs melted butter 1/4 cup sugar
Filling 32 oz cream cheese (4 - 8 oz packages) at room temperature 2 whole ONLYVANILLA.COM vanilla beans 1/4 cup sour cream 1/4 cup heavy cream 4 egg yolks 2 tsp ONLYVANILLA.COM pure vanilla extract 1 1/2 cups sugar
Preparation
Crust Preheat over to 350 degrees. Butter or lightly spray a 10" spring form with vegetable spray. In mixing bowl, thoroughly mix the almonds, vanilla wafers, sugar and butter until it is the consistency of sand. Press into a spring form pan with a spoon, spreading up about half way up on the sides of the pan.
Filling Split the vanilla beans lengthwise and scrape each half with the back of a knife. Add the vanilla been seeds to the sugar in small bowl and work the seeds well into the sugar. Add the cream cheese, sour cream, vanilla extract and heavy cream to large mixing bowl and mix (with electric mixer) until smooth. Add egg yolks one at a time to the cheese mixture until well blended. Add the sugar and vanilla bean seed mixture to the cream cheese mixture and mix well. Pour the Filling into the prepared crust and bake for 45-55 minutes. Remove from oven and let cool. Once cool, run a thin knife around the sides to loosen and remove the sides of the spring form pan. Carefully loosen and slide the cheesecake from the pan base onto a cake or serving plate.
This cheesecake is wonderful by itself or you can top it with strawberries, blueberries, raspberries, peaches, spiced apples, caramel and chocolate syrup, or any of your favorite cheesecake toppings
